Easy Italian Salad

An easy but so often forgotten salad with a hint of herbs to tickle the taste buds


Serve 1


INGREDIENTS

1-2 medium tomatoes, chopped

5 cm cucumber, chopped

1 tablespoon onion, chopped

1 tablespoon spring onion, chopped

1 teaspoon fresh basil, chopped


For the salad dressing:

1 tablespoon lemon juice, freshly squeezed

1/2 teaspoon balsamic vinegar

1/8 teaspoon herb salt (I used Ina Paarman's garlic and herb low salt seasoning)

Salt and pepper, to taste



METHOD

Mix together the chopped tomatoes, cucumber, onion, spring onion and basil. Let it stand for about 10 minutes for the salad to adopt the flavours of the onion and herbs.


Add salt and pepper to taste. Serve with salad dressing.
